“Mixing” ZenMatcha

This particular grade of “mixing” ZenMatcha tea is unquestionably our most affordable variety of matcha. The leaves used to make this grind are slightly older and larger than the “drinking” or the “premium” Zenmatcha, and so it has a slightly more bitter taste. They leaves are harvested at the same time as the other two grades, however they are taken from lower down on the tea plant and so have a different texture and constitution.  Like the other two grades, they are hand-sorted and de-stemmed, lightly steamed and then ground on granite stone mills to a fine powder.  The consistency of the powder is somewhat courser with this “mixing” grade, which imparts a “fuller” feeling in the mouth when consumed.  However, when blended with milk, soy, ice cream, fruit etc, this “mixing” matcha is delicious, and it boasts a comparable nutritional profile to our other two grades.

In fact, the older tea leaves used to make these less premium grades of matcha tea actually have slightly more catechins or cancer-fighting substances (eg: EGCG) in them, which imparts a slightly more bitter taste to the tea.   However, they have slightly less l-theanine, resulting in a less “sweet” taste. 

All in all, the “mixing” ZenMatcha is comparable to our other two grades of matcha with respect to it’s overall health benefits.  It is excellent value, and is especially good for both “mixing" and cooking!

A note on caffeine content:

All three grades of ZenMatcha contain comparable amounts of “tea” caffeine, about 70 mg per 1 teaspoon serving of matcha. Thus, they all impart an equivalent, healthy energy boost!
